Finding the optimum roast
Most of our coffees reach this peak at a Full City Roast, where the beans turn a rich, chestnut brown. We also offer a special selection of dark-roasted coffees. Longer roasting times develop more of a coffee's volatile oils, creating deeper, richer flavors. So why not dark roast every coffee? While many coffees benefit from an extended roast, some coffees have delicate flavor and aroma compounds that may actually be "roasted away." The trick is to find the proper balance for each bean.
SIX ROAST LEVELS
We offer six different roasts to suit a variety of tastes, from American to French Dark Italian. Our Flavors and Coffees of the World are -all American Roasts. You can find a wide selection of dark roasts in our Dark Roasts section. In addition, several of our Blends and Better World coffees are also dark roasts.
American beans are a rich, chestnut brown.
Full City beans are slightly darker than our American Roast.
Viennese beans are medium brown, with a tangy flavor.
French Roast are moderately dark, with oil on the bean's surface.
Espresso beans are dark brown and oily.
French Dark Italian beans are very dark brown and oily in appearance.
